The on-tap Draft Latte at our cafes and the Lattes in the can are a little different. In the cafes, our kegs are made fresh every day by our baristas with nothing but whole milk (or oat milk for our dairy-free Draft Latte), our cold-pressed espresso, (Acacia/Xanthan) gums, and nitrous oxide. This is a very perishable version of the beverage, so at the end of the day, we dispose of any extra product and start fresh the next morning. We even clean and flush the line on the tap daily to keep things sanitary and tasting great!
The canned version of the latte is formulated differently to be a shelf-stable product and ready to be enjoyed on the go. When you buy a draft latte in the cafe, you have the option of adding sweeteners from the bar. Since a majority of consumers do add some sugar, but may not be able to do so while on the go, the canned version is formulated with this already added in. It is made with reduced-fat milk instead of whole milk. The small amount of added sugar plays a role beyond sweetening the drink. It also helps balance the macronutrient profile, which has a major impact on how the beverage holds its texture and also affects the shelf life. Various sugar substitutes would only act as a sweetener and would not complete all of the jobs this small amount of sugar is doing for us. With that being said, we have reformulated the canned Latte in the past by finding ways to reduce calories without sacrificing taste, and our R&D team will be working to come up with even healthier versions in the future!
